I never knew how much i actually liked beets until i made this fabulous warm beet salad- and you know all the hype these days about beets being a super food-

i am getting quicker at this salad which means i now able to throw it together on a week night. and i find that this salad is much tastier than other beet salads i have tried where the beets are served cold.
tips: do not skimp on the onion. it is fantastic and soaks up the beet flavor and color. and for those of you that have a fairway nearby or other good supermarket, you can buy the beets pre-cooked.
Any favorite beet recipes? please post. i have leftover beets. . .
I have had golden beets out but never made them in the house. . I will definitely give them a try with this recipe. Thanks Jodi.
